Farm Fresh Blackberry Jam


​When making Jam from fresh berries, I try to add a few un-ripened
berries because they'll add to the acid without adding so much lemon
juice.


The best fruit for jams have some under ripe berries, some
over-ripe berries and mostly ripe berries, but the mix make a great
flavor.


Follow the directions on the package of pectin, I've found
that each are different and when I follow their directions, the
results make us all happy.


I reserve about 1/3rd of the hot berries
and strain them before canning, so my friends that can't have the
seeds can have some of our jam. Normally though, we give out whole
fruit jams.


The added crunch texture on a warm piece of toast on a
cold morning cannot be beat.
