Spanish rice
















1 cup of rice

2 cups of water

1 tablespoon of Knorr Caldo chicken and tomato soup base.

 

 

 Put in a pot, bring to a boil, cover, simmer as low as you can for 20 min. then turn off heat, uncover and let sit for 5 minutes.


Salsa

 

 

















1-2 small cans of tomato sauce

1-2 ripe tomatoes

1-2 bundles of green onions

1 bundle of cilantro

2 yellow peppers (optional)

1-2 jalapenos (optional)

1 teaspoon salt (optional)

 


 

 

 











Dice up tomatoes, green onions and cilantro in a large bowl. Add tomato sauce. If you want a hot salsa add the peppers after you boil them but make sure you take the seeds out after you cut them open because the seeds will make it extra hot. I never add salt to my salsa but some people like theirs extra salty.

Oatmeal cranberry cookies

 ½ cup of shortening

½ cup margarine or butter

1 1/2  cups of flour

¾ cup of sugar

¾ cup packed brown sugar

2 eggs

1 teaspoon of baking soda

1 teaspoon vanilla

1 cranberries

½ cup white chocolate

 ½ teaspoon ¼ teaspoon ground nutmeg mix these two into sugar.





In mixing bowl beat shortening and butter with electric mixer on medium to high speed till softened. Add half of the dry ingredients, stir, and add other half. Stir in oats and cranberries and white chocolate chips (optional) using a teaspoon to make dough scoops, drop onto an un-greased cookie sheet 2 inches apart. Bake at 375F oven for 8-10 minutes or until golden. Cool on wire rack.

1 cup of Bulgur

2 cups of chicken stock

 

Bring to simmer over high heat, as soon as it starts to simmer, turn off heat, cover and let sit for at least 20 minutes.

 

Bulgur is a great source of whole wheat, high in fiber, protein, iron and vitamin B-6, plus low in fat. If you have a gluten sensitivity then you should avoid Bulgur and try brown rice instead.
